Weekend Recap!


Hello everyone! I hope you all had a great weekend.  I’m super excited for this week because it’s going to be a short one. It’s MEA week here in Minnesota, which means the kids don’t have school on Thursday and Friday. We are going to take a little weekend getaway to Chicago and I’m beyond thrilled!

Here’s what we were up to this past weekend.

On Friday night, we went up to the high school for Youth Night. Youth Night is a pre-game event that the football association hosts for all of the younger players. It was a great time! There were games, bounce houses, food and lots of friends to run around and play with. Friday afternoon the weather was beautiful so we thought it would be a great event for the whole family to attend. It ended up being A LOT chillier and I didn’t get any pics!  #gottagetbetteraboutthat

On Saturday morning we all watched Parker’s last flag football game. It’s been a fun season and Parker really enjoyed playing on The Silver Bulls team.  I tried to watch as much of the game as I could but Camryn didn’t make it too easy since she was crawling ALL over the place!



Delaney and Jared went to a Daddy/Daughter Dance on Saturday night and had such a great time. It’s really hard sometimes to carve out time to spend with each of the kids individually, this dance is really special to them both because it’s something just for the two of them!  My sweet little Laney Pie! Love them!

While they were dancing the night away I was off celebrating the birthday of one of my very best friends.  We’ve know each other for more than 20 years and have THE BEST TIME when we’re together. It’s just a small group of us that gets together for birthdays and we each have a birthday in a different quarter of the year so it’s nice to know that at least we’ll have birthday celebrations to get together every couple months. Life has a way of getting in the way of getting together too often.  We didn’t take any pics of ourselves, darnit, but all I can say is that the Karaoke machine did make it’s way up from my friend’s basement and we had a grand time dancing and “rapping” (I use that term very loosely) to Bone Thugs and Snoop Dog!  Too! Much! Fun!

I spent the day Sunday recovering from Saturday night’s shenanigans, oops!, and getting ready for this week! Monday, I’m comin’ for ya!!

P.S. I did manage to pull off an awesome dinner on Sunday night, I made Taco Stuffed Sweet Potatoes and they were delish!img_8452

    1. Hey! Here’s the recipe…
      4 medium sweet potatoes
      1/2 sweet onion
      1 lbs lean ground turkey
      1/2 tbsp. olive oil
      1/2 cup water if needed
      1 tbsp. chili powder
      1/2 tbsp. paprika
      1/2 tbsp. garlic powder
      1 tsp dried oregano
      1/2 tbsp. salt
      1/2 tbsp. pepper
      1 avocado
      1 head of lettuce or shredded lettuce
      2 scallions

      Preheat oven to 375 degrees F. Scrub and clean sweet potatoes and poke all over with a fork. Place the sweet potatoes on a baking sheet and cook on the top shelf of the oven for about 55 minutes until the potatoes are tender to touch. The larger the potato, the longer it will take to cook, so I always try to
      choose potatoes that are roughly the same size so they all cook evenly.
      While the potatoes are cooking, heat the olive oil in a pan on medium heat and add diced onion. Cook the onions down until they are tender and smell delicious.
      Next, add the ground turkey to the onions, separating any large pieces using the back of a spoon or spatula. Cook the turkey until it’s just about done, approximately 5 minutes.
      In a small bowl, combine spices. Then, add the spices to the ground turkey and onion mixture.
      While you’re waiting for your potatoes to finish cooking, begin dicing your veggies and toppings.
      Once the sweet potatoes have finished cooking, cut them down the middle in a cross shape. Spread the potato open and pile high with turkey, your favorite toppings, and serve warm.
