It’s the last Wednesday of the month and that means I’m linking up with Mix and Match Mama and Sheaffer Told Me To for their What’s Up Series where we talk about…what’s happenin’ these days!

1.What We’re Eating This Week

During the school year, we have activities just about every night after school…which makes every night equally hectic when it comes to planning out what’s for dinner. I find that I am a lot less stressed if we at least have a plan for the week for dinner, even if it means we’re going out!

During the summer, we’ve been fortunate to have only 2-3 weeknights with organized activities which means a lot more flexibility and less rush when it comes to dinner time! I work Monday/Wednesday which also happens to be when Delaney has soccer so I’ve decided from here on out, those nights will be either Crockpot or Instapot meals.

I usually only meal plan Monday thru Thursday and then we wing it on the weekends. This week’s menu is made up of recipes from my Pinterest Board. I have a board called “This Week’s Menu” that I move recipes for the week to so I can access them quickly.  Here’s what’s on the menu this week for us:

2. What I’m Reminiscing About

I’m reminiscing about the road trip we took to Ohio a couple of weeks ago, I wrote about it on Monday’s blog if you want to go back and read it! Even though it can get a little crazy sometimes taking the kids out of their “element” ; I love spending uninterrupted one on one time with them and taking them to see new things. We try to take them on a summer vacay each summer and usually the end of our little trip also means summer is nearing it’s end too. Time goes so fast and I want to enjoy these moments with kids while they still enjoy being with me!  What are you reminiscing about?!

4. What We’ve Been Up To

While we love to watch Parker play baseball, we’ve been enjoying the fact that we only have Delaney playing sports right now. We have more free time without all the activities going on so we’ve been checking things off on our summer bucket list! I think I’m going to blog about the things we’ve done so far on our list in the next week or two! What are we missing from our SUMMER BUCKET LIST?

5. What I’m Dreading

The kids going back to school! As much as I need a break some days, I still love to have them home with me!

6. What I’m Working On

I don’t think I’m really working on anything right now…this is making me think I better start!

7. What I’m Excited About

We are going to spend the last week of summer vacation up at my parent’s house on the lake and I’m really looking forward to some relaxation with the kids!

8. What I’m Watching/Reading

I’m finishing listening to Beartown on Audible at the moment. A friend highly recommended the book to me because we’re a hockey family but I never really got into it. We started listening to the book on our way home from Ohio so I’m wondering if maybe I was just too distracted to really tune into it. If you’ve read it and loved it, let me know maybe I’ll give it another shot.

I’m not really watching anything at this point…after binge watching all 8 seasons of Game of Thrones in the month of June (#iprobablyshouldntadmitthat) , I’m feeling like I could do without TV for awhile.

9. What I’m Listening To

I typically listen to Podcasts when I’m driving and usually tune into Rise, Parenting Beyond Discipline, Rise Together, Ted Talks, Goal Digger and Oprah’s super soul conversations.

10. What I’m Wearing

I’ve been wearing a whole lot of athleisure this summer but no matter what I’m wearing 99.9% of the time I also wearing my Birkenstocks. This is the first pair I’ve owned and I LOVE them. Side note~ did you know that you’re supposed to seal the core whenever it starts to loose it’s shininess?

11. What I’m Doing this Weekend

This weekend we have dinner plans with friends on Friday, I work on Saturday  and Sunday we have the day all to ourselves. Hoping to do something outdoors and maybe have a bonfire!

12. What I’m Looking Forward to Next Month

Next month Jared and I are taking a trip to Newport, RI and we’re super excited! If any of you have been, comment below with any tips or things we must see/do!

What’s Up Wednesday!

Hi there and Happy Wednesday! We’re making it people…half way to the weekend! I’m linking up with Sheaffer and Shay for What’s Up Wednesday, thanks for following along to find out what we’re up to this week!

What's Up Wednesday

1. What We’re Eating

I’ve learned over time that the simpler we keep our menu the less frustrating it is for everyone. Our kids really like to keep things basic. Our dinner usually consist of a protein (typically poultry or fish), a vegetable and a complex carb.  On Monday I made THE EASIEST dinner you’ll every make which is also a staple around our house. We call it Russian Chicken, super creative being that it’s made with Russian Dressing. Ha!  One of my good friends made this meal for us when we first had Parker and we’ve been making it ever since.

Russian Chicken

Ingredients

  • 4 chicken breasts (thawed)
  • 1/2 a packet of Lipton Onion Soup Mis
  • 1 bottle of Wishbone Russian Dressing
  • 1/2-1 full jar of Apricot preserves

Directions

  • Preheat Oven to 350 degrees
  • Mix onion soup mix, dressing and apricot preserves in a small saucepan and bring to a boil over medium heat.
  • Meanwhile, place the 4 chicken breasts in a 9×13 glass baking dish.
  • Once the mixture is brought to a boil, pour over chicken and place pan (uncovered) into oven for 30 minutes
  • *Cooking time may vary depending on your oven and the size of the chicken breasts

We usually serve our chicken over a bed of brown rice alongside green beans or asparagus.

2. What I’m Reminiscing About

Now that the weather’s getting nicer, I’m thinking a lot about summer! I’m looking forward to summer break and being home with the kids!

3. What We’ve Been Up To

Since we got back from Spring Break, it’s pretty much been business as usual around here. Our weeknights are filled with hockey, gymnastics, dance and flag football.

 

4. What I’m Dreading

I honestly can’t say I’m dreading anything right now!

5. What I’m Working On

I’m working on organizing our basement. #alwaysaworkinprogress  You know what, this brings me to something I WISH I were working on. I wish I were re-organizing my Tupperware cabinet, anyone of any great tips on how you organize all of your Tupperware?

6. What I’m Excited About

I’m really excited about Parker’s Hockey Tournament this weekend! It’s Thursday thru Sunday and I’m looking forward to seeing the boys play! I’m also really excited that it’s supposed to get up to 63 degrees today, woot!!  #timetobreakouttheshorts Ha!

7. What I’m Watching/Reading

I have been trying to watch the Heal documentary on Netflix for forever! I’m about half way through and I really am enjoying it but it’s one of those movies that you really have to be watching 100% in order to get everything out of it and a lot of times I’m doing about 50 million other things while I’m watching a movie or TV show. #whoswithme  Has anyone else seen it, what did you think?

Other than that, the only other thing of watched at home recently was “Abducted in Plain Site”. This story is beyond tragic, especially since as the story continues to evolve you can’t help but to think her parents could have done a much better job of protecting their daughter…instead they were protecting themselves. I try to keep my TV viewing a little more upbeat than the last show.

Over the last month I’ve read “Rising Strong” by Brene Brown, “The Dinner List” by Rebecca Serle and “Beneath A Scarlet Sky” by Mark Sullivan. All three books were great. “Rising Strong” is in the personal development genre while “The Dinner List” is fiction and quite an entertaining read. I read this one while we were on vacation, you can read about our trip HERE. The last book, “Beneath A Scarlet Sky” is a fictional book but based on a true story about one person’s account of their time in Italy during Word War II. A very interesting, suspenseful and heart wrenching story. I would recommend all three books.

 

 

8. What I’m Listening To

I spend a lot of time in the car on the days that I’m working driving from patient to patient. I used to listen to talk radio a lot but I’ve gotten into the habit of either listening to audiobooks or podcasts. Usually I’m listening to self improvement, motivational speakers or educators on various topics or listening to a non-fiction audiobook. The podcasts I listen to most are:

9. What I’m Wearing

I’ve been wearing a ton of Athleta lately, mostly their travel pants. I bought The Wander pant and The Brooklyn Pant in olive before we left for our trip to San Francisco and I’ve been wearing them a few times a week ever since.

 

10. What I’m Doing this Weekend

11. What I’m looking Forward To Next Month

I’m really looking forward to the month of April because my parents are coming back to Minnesota after being gone over the winter. Also looking forward to celebrating Easter with our extended family.

What’s Up Wednesday!

It’s the last Wednesday of the month, how did that happen?, so that means I linking up with Sheaffer Told Me To, The Larson Lingo and Mix & Match Mama for their monthly link up.   I was looking back at my September What’s Up Wednesday and noticed I was asking myself the same question then as to how the end of the month had come so quickly. I really can’t believe how quickly time flies!

What We’re Eating This Week

We’re continuing to use Take Back the Kitchen for our meal planning menus in our household. Having someone else plan my menu and make my grocery list allows me a little extra time during the week to “find my mojo”! Typically, we choose just a couple of the meals from each menu because we often have leftovers…here’s our menu this week !

What I’m Reminiscing About

Often times when I’m home with just Camryn and Laney while Parker is at school, I catch myself thinking about how different things were back when I was home with Parker and Laney when they were little. Parker and Laney are a little under two years apart so they were both still taking naps  and we spent many of our days at home back a few years ago. Camryn and Laney are 4 years apart so instead of relaxing days at home, our days are filled with activities like gymnastics and dance. Camryn is on the move and all over the place so instead of sitting back, relaxing and watching said activities… I’m chasing her everywhere! I wouldn’t trade it for anything but it sure does keep me busy and it’s a whole different ball game being home with kids with a larger age gap! Here’s a few pics of Laney at gymnastics now and Parker and Laney at gymnastics when they were 2 and 4 years old!

What I’m Loving

I was loving the beautiful fall weather…last week it was in the 60s and 70s. The sun was shining, the leaves were turning, the temps were perfect for enjoying the outdoors. Flash forward to this week, it is CHILLY! We had a wind advisory here yesterday because it’s SO WINDY but I’m still loving the change in seasons, especially since it means we’re headed to my most favorite season of all, CHRISTMAS!!

What We’ve Been Up To

We just enjoyed a 4 day weekend because the kids were off from school last Thursday and Friday, I posted about Jared and I’s weekend getaway to Chicago here.  We had a great time. Parker just wrapped up his football season and is getting ready to start hockey here in a couple of weeks, let the ice time begin!!  Not looking forward to a 7am ice time coming up next weekend, yikes!!  Laney and I have been busy going to dance and gymnastics on Tuesdays and Thursdays. Other than that, it’s business as usual around here.

What I’m Dreading

Last month, I mentioned I was dreading putting everything back into the laundry room, office, bathroom and coat closet that we remodeled. Happy to say that that job has been taken care of, it really wasn’t that bad, and now I just need to decorate those rooms! Can’t say that I’m dreading anything right now, other than that 7am ice time next weekend.

What I’m Working On

Is this a trick question?! What am I not working on? I always feel like I’ve got a million balls up in the air…right now,  I’ve got a few things on my to do list. I need to book Laney’s birthday party, she wants to have it at Skyzone and order her invitations. My family is celebrating Christmas early this year when we get together for Thanksgiving so I’m working on making my list and checking it twice!

What I’m Excited About

We’re doing a Disney land and sea that’s being planned courtesy of Erika and Mix and Match Mama Travel Agency. We’re now less than 6 months away from our trip and I’m SUPER EXCITED about that!

What I’m Watching/Reading

Still watching Gossip Girl over here and reading my current favorite book, “Grace Not Perfection” by Emily Ley.

What I’m Listening To

I listen to Pandora at home and often have it set to Wedding Songs radio,  not sure how I ever found it but I love the mix of music on that station. Soon…I’ll be switching it up and playing Michael Buble Christmas!  When I’m at work I spend a lot of time in my car driving from patient to patient, I’d like to start listening to some podcasts…any recommendations?

What I’m Wearing

I was just thinking today that whenever I wear jeans and a top during the day, I don’t feel like I’m in the proper attire to get things done when I’m at home. It’s fine if I’m headed out somewhere but when I’m at home, I feel like I belong in yoga clothes or something of that nature so I can run around the house cleaning, cooking, playing, ect…  I still like to look put together when I’m wearing yoga or athletic clothes but I think I need an update!

What I’m Doing This Weekend

We have a fun weekend planned this weekend. On Friday night, there’s a fall festival at Parker’s school. The kids will get a chance to wear their costumes, play games, jump in bounce houses, get their faces painted and eat some carnival food. Should be a good time! Saturday afternoon we are going to a baby shower for one of my friends from high school who is due with babies #4 and #5. This is actually her 2nd set of twins!! I’m so excited to celebrate her and her sweet family:) On Sunday we’ll go to church and later in the afternoon we’ll head over my good friend Alek’s house to meet her new baby girl and bring them dinner.

What I’m Looking Forward To Next Month

Next month we’ll be celebrating Laney’s 5th birthday, Thanksgiving, ThanksChristmas with my family, my sister Kaili will be coming into town and we’ll start decorating for the holidays. Bring on the fun!!

When Shay posted yesterday that today is What’s Up Wednesday I had to double check my calendar…how is it possible we’re at the end of September already?!

My family and I are still rockin’ Take Back the Kitchen’s weekly menus. I can’t believe we’ve been doing this for 6 weeks, it’s been a total mealtime game changer.

We’re also eating Mix and Match Mama’s Apple Butterscotch Pecan bread, unfortunately there are no pictures because it was devoured in .0006 seconds by my kids and their friends after school yesterday!

2.  What I’m reminiscing about…

I can’t say that I’m reminiscing about anything right now…mama ain’t got time for that at the moment!

3. What I’m loving…

The change in the seasons! It was in the high 80’s here in Minnesota last weekend. Let me tell you, it was so hot watching Parker play flag football Saturday morning. I was begging for some cooler weather!  A couple of days into the week this week and we have some “normal” temps, around 65 degrees. I love the leaves changing, cozier nights at home and getting to watch Parker play football!

4.What we’ve been up to…

Now that school’s back in session, we’re pretty much back to a “normal” routine. On the days I’m home with the girls, Laney goes to gymnastics and dance in the mornings. Afterwards, we run errands for a little bit before we have lunch and I get Camryn down for nap.  Last year was Laney’s first year of dance and while she liked it, almost EVERY TIME we went she would say she wanted to go to gymnastics instead. She really loved being a part of the recital at the end of the dance season last year, so we signed her up again. We are also giving gymnastics a try this fall and she’s totally loving it! I love watching her, she is a ball of energy and such a free spirit! Parker has football a couple of nights a week and plays a game every Saturday morning. Mostly we’re hustling these kids around, trying to keep this house in order and working on the mudroom/office/laundry area remodel…there’s not too much time for anything else!  We did have family pictures last Sunday, fingers crossed they turn out!!

5.  What I’m dreading…

I’m totally dreading putting everything back into the office, laundry room and mudroom.  There is just SO. MUCH. STUFF!!  We’ve lived in our house nearly 10 years and during the course of that time I think we’ve been hanging onto a lot things we should’ve gotten ride of a long time ago.

img_8074I’ve been told that neither of my girls are going to care what the wedding trends were in 2006 when they get married. Maybe Parker will be interested?! Ha!

6. What I’m Excited About…

My sister is coming into town from San Francisco on Friday and I am SO EXCITED!!! She moved to San Francisco a little over a year ago and I LOVE when I get to see her. I’m try to drop subtle hints as much as possible that she needs to move back…she may tell you that my hints are not subtle. Don’t believe her.img_7231.jpg7. What I’m Watching/Reading…

I love to read but unfortunately I’m not reading much of anything these days. I’d like to know, how do others fit it into their schedules? I just feel like at the end of the day I have ZERO time to sit down and read. I did, however, finish the final season of Grey’s Anatomy. I usually turn on Grey’s when I sit down to do my patient documentation at night, multitasking at it’s finest. I thought the season was good overall but that last episodes left me wanting more! Why couldn’t they have wrapped everything up nicely and put a bow on it at the end instead of leaving things open ended?

8. What I’m Listening to…

I listen to Wedding Song Radio on Pandora a lot.  I find the music to be relaxing and sweet to listen to and sometimes the kids dance with each other to it. Now that’s enough to make my hear melt.

9. What I’m Wearing…

The weather has been so unpredicatable here, last weekend it was hot enough for shorts and now it’s definitely cooled off. I just got this dress from Nordstrom’s and I love it already. It’s super comfortable and versatile, easy to wear last weekend when the temps were HOT and I can throw a jacket over it now that it’s cooled off a bit.  It also comes in a TON of colors!  I also NEED these jeans from Evereve in my closest (like yesterday!), I’m loving the step hem!

10. What I’m Doing this Weekend…

This weekend we’re celebrating our sweet baby girl’s 1rst birthday.  I don’t know how this past year went by so quickly…but it did. We’re so excited to celebrate with friends and family! Stay tuned next week because I’ll be recapping her party!img_802711. What I’m Looking Forward to Next Month…

Over the kid’s MEA weekend we’re dropping our sweet angels off at their Grandpa and Grandma’s house and Jared and I are headed to Chicago for the weekend. We’re in desperate need of a getaway and I’m so happy we have this to look forward to!
